Combine the oats, flour, walnuts, yeast, salt, milk powder, and coconut in a large mixing bowl; set aside. Stir the sugar, water, canola oil, and peanut butter together in a small saucepan over low heat until the sugar has dissolved and the mixture is hot and smooth. Pour the peanut butter over the oats and stir until evenly combined. You can cook Peanut butter granola using 8 ingredients and 8 steps. Here is how you cook it.
Ingredients of Peanut butter granola
- Prepare 120 g of oats.
- It's 95 g of peanut or other nut butter.
- Prepare 3 tablespoons of oil.
- Prepare 2/3 teaspoon of salt.
- Prepare 50 ml of syrup e.g. honey, agave or maple.
- Prepare 2/3 teaspoon of cinnamon.
- Prepare 1 teaspoon of vanilla extract (optional).
- It's 70 g of chopped nuts - I used almonds but any would work.
Melt together the honey and peanut butter over very low heat, stirring constantly until smooth. Add the vanilla and stir again. Add the dry ingredients & stir to combine. Transfer the peanut butter granola mixture to a greased baking sheet and press it onto the pan (see bottom right photo below).
Peanut butter granola instructions
- Preheat your oven to 160C and get out a baking tray.
- Chop your nuts and mix them with the oats in a large mixing bowl.
- Measure out the peanut butter and mix with the syrup, salt, vanilla (if used) and cinnamon. Heat this mixture in the microwave for 20 seconds to help combine..
- Pour the peanut butter mixture into the oat and nut mix and stir through so everything is coated. If it looks too liquid, add some more oats..
- When everything is coated in the peanut mixture, transfer to the baking tray and spread evenly.
- Bake in the oven for 10mins and then flip the mix so the bottom comes to the top.
- Bake for another 10mins or until everything is browned (but not burnt!). Leave to cool..
- Once cooled, serve in a bowl with your choice of milk, fruits and seeds. Here I have sunflower seeds and dried cranberries..
In a separate bowl, stir together the peanut butter, honey, coconut oil, vanilla, salt and cinnamon. Pour the peanut butter mixture over the oats mixture, and stir until evenly combined. Pour the peanut butter and honey over the oats and stir until oats are well coated. If you aren't using salted peanut butter, you can add a little salt. Let the granola cool completely on the baking sheet without stirring.
