Ingredients of "Faked" Potato Soup

  1. You need 1 of large head cauliflower.
  2. You need 5 of shallots.
  3. You need 1 of stalk celery.

"Faked" Potato Soup instructions

  1. Add the olive oil to a large pot on medium/high heat..
  2. Rough chop all the veggies except the bay leaf, and saute with Cajun seasoning to taste, until softened..
  3. Add a little bacon for flavor:).
  4. Add your stock and bay leaf and bring too a boil..
  5. Boil for 10 minutes..
  6. Remove bay leaf and carefully puree soup in batches. Be sure to cover blender lid with a towel to prevent explosions;).
  7. Once pureed, add back to cooking pot and simmer..
  8. Add cream and stir well..
  9. Gently simmer for 20 minutes. Add some more bacon and chopped green onion..
  10. If too thick, you can thin out with more stock, or cream. Serve and enjoy:).

This is wonderful on a cold day.which we've had plenty of, even here in the South!. I grew up on potato soup that consisted of four ingredients. Potatoes, Heavy Cream, Butter and Black Pepper. As if that wasn't indulgent enough, we'd fill it with homemade crumbled corn bread. If I grew up with that kind of soup and love this one, you've got to be.
