  5. It's 2 of tomatoes, diced.
  6. It's 1 tin of coconut milk, full fat.
  7. Prepare 1 tin of chickpeas.
  8. It's Handful of green peas.
  9. You need 1 of lemon.

Easy to prepare and still lots of flavor, with minimal ingredients. We served our red curry chickpeas with cauliflower rice but you can serve this with naan or basmati rice! You can make it vegan or add pork tenderloin for the meat eaters. Serve in a bowl or spooned over your favourite rice.

  1. Sauté the onions and garlic in coconut oil for 5 mins until translucent..
  2. Add the curry paste and continue to fry for another 5 mins or so stirring often so it doesn’t catch..
  3. Add the tomatoes and stir well, then add the coconut milk stirring well to mix..
  4. Add the chickpeas and simmer the curry for 20-30 mins until the sauce has reduced and thickened..
  5. Add the peas, cook for a further 5 minutes, stir in fresh lemon juice to taste (I added a tbsp) then serve and enjoy 😊.

I like to serve this chickpea curry with steamed white rice, but it's delicious with naan, brown rice, or just as is! This is Thai curry, so naan doesn't really fit in the picture, but it's the extra sauce is practically screaming for some bread to get dunked in it. The best thing about curry is that you can really add in whatever you like. Mildly sweet from the peppers and coconut milk, and slightly spicy from the Thai curry paste and red pepper flakes.
