Spiced Bhindi(Okura) and chickpea Curry(V,GF) This is a spicy and "chatpatta" recipe made with gram flour and regular Indian spices. This recipe can serve as a side dish for your lunch or dinner. That's what I have done in this recipe, fried the okra till all the sliminess disappeared. Do not cook on high flame else the okra will get brown quickly, even before the sliminess can go away. In this aloo bhindi both bhindi (okra) & potatoes (aloo) are to be sauteed or fried in oil. It does not require the raw bhindi and potatoes to be added to directly as this will cause the okra to become soft and mushy.

  1. Heat a large wok or frying pan over a medium heat. Add the oil, then the onions, cooking until soft. Stir in the okra and chickpeas. Add the tomatoes and chilli, then season. Mix well and keep stirring gently, taking care not to break up the okra. Okra releases a sticky substance when cooked, but keep cooking, stirring gently – this will disappear and the tomatoes will become pulpy, about in 10 mins..
  2. Lower heat, add ground coriander and cook for another 5-10 mins. Add 2 tbsp water, cover and let simmer for another 4-5 mins. Serve with basmati rice or chapati bread..

Thus the recipe won't have a good texture and won't look good or appetizing on the dinner table. Here is another simple curried Okra or a basic bhindi masala. Add more spices or add some coconut milk for creamy curry. I get Okra from the Indian store and they seem to always have a lot in stock. Get green and young okra and try it in one of these Indian recipes.
