- Preheat 425 oven.
- Cook macaroni as per directions.
- Brush non stick mini muffin pans with butter, 48 total. Sprinkle with parmesan.
- Melt butter in sauce pan..
- Whisk in flour for 2 minutes, medium heat.
- Whisk in milk until boiling, about 5 minutes, keep stirring.
- Add cheeses, whisk until melted.
- Remove from heat and fold in the egg yolk and paprika.
- At this point I might add some salt, but I am not sure it is necessary.
- Spoon into muffin pan, sprinkle with parmesan.
- Bake for 10 minutes.
- Let cool at least 5 minutes.
- Transfer to platter and serve.
