Mix veg pulao with Raita. I got this restaurant style veg pulao recipe from a friend who is an expert in cooking non-veg recipes. She shared her South Indian style Vegetable pulao recipe with me. In Karnataka, all my friend call it as vegetable pulao/palav.

Ingredients of Mix veg pulao with Raita

  1. You need 2 cup of Basmati rice.
  2. It's 1 cup of ghee.
  3. You need 2-3 of cloves.
  4. Prepare 1 of black cardamom.
  5. Prepare 1 of bay leaf.
  6. Prepare to taste of Salt and red chilli powder.
  7. It's 2 of potatoes cut into wedges.
  8. Prepare 1 cup of finely chopped veggies (carrot. Cabbage, capsicum).
  9. It's 4 of onions sliced.
  10. You need 6-7 of garlic cloves.
  11. Prepare 1 of green chilli.
  12. It's 4 cups of water.
  13. You need 10-12 of soya chunks soaked in water.
  14. Prepare 10-12 pieces of fried cottage cheese.
  15. It's 1/2 kg of curd for Raita.
  16. Prepare 1 cup of curd.
  17. Prepare 1 of big leaf of cabbage for smoking process.
  18. It's of Fresh coriander leaves for garnish.
  19. It's 2-3 pieces of charcoal.
  20. You need 1 of papad.

Add the green chilli, ginger-garlic paste & onions. Add salt to this and mix well. Add sugar in this to balance the saltiness of the pulao. Mix everything nicely and cover it with lid.

Mix veg pulao with Raita instructions

  1. Wash rice 2-3 times and soak them in water for 1/2 anhour.
  2. Take a heavy bottom pan heat ghee in it. Add all the dry condiments like jeera. Tejpatta, daalchini, clove, green and black cardamom. Add sliced onions and sauté them for few minutes. Add chopped veggies and stir fry them. When veggies become little soft add salt and pepper powder. Add curd and stir continuously to mix it well with veggies. When ghee comes out then add soya chunks and Paneer, potatoes to it. Mix well and cook for 2-: minutes..
  3. Now pour 4 glasses of water and boil it. After water boiled add rice into it and cook it on high flame after 5 minutes when water reduced cover the pan with a lid and slow down the flame. Check out after 2/3 minutes whether rice is cooked or not. Rice is cooked completely then put cabbage leaf on it. Heat ghee. Burn charcoal and put it on cabbage leaf. Put dry condiments on the charcoal and pour heated ghee on it and again cover the pan and let smoke flavor dissolve in the pulao completely..
  4. Roast a papad and put it on a bowl and press it with a cloth to get the shape of bowl. Serve pulao in it hot with mix veg Raita.
  5. For Raita sift the curd in a sieve and add finely chopped onion and tomato and cucumber. Mix salt and black pepper powder. Bhuna jeera powder and coriander leaves add at the time of serving..
